history
Winemaker since 1853, Le Cellier de Lachat offers a wide selection of wines from the Savoie AOC, including whites, reds, and rosés. Both owner and producer, its history is closely tied to that of the vineyards of Savoie and the Alps. From the sparkling Apremont to Chignin, Gamay, or Mondeuse, these wines embody an authentic and vibrant lifestyle, recognized beyond France’s borders. Le Cellier de Lachat is committed to crafting wines that elevate everyday life while reflecting a unique heritage. The wines of Savoie represent a singular tradition within the French wine landscape.
Vineyard
The wine is produced on the northern side of Lake Bourget in Chautagne and Jongieux, as well as in the Combe de Savoie on granite and clay-limestone soils with a south-east exposure. Production covers 48 hectares, amounting to 3,200 hectoliters of wine, representing 2.5% of the Savoie vineyard.
Winemaking
Hand harvesting. Vatting lasts 5 to 7 days, after which the tank is drained and the free-run wine is separated. Once alcoholic fermentation is complete, malolactic fermentation (the second fermentation) is initiated, transforming the grape’s malic acid into lactic acid. This process reduces the wine’s acidity and prevents fermentation from occurring in the bottle. Malolactic fermentation produces wines that are fuller, longer on the palate, and better suited for aging.
