history
Winemaker since 1853, Jean Perrier & Fils offers a selection of wines from AOC , white wines, red and rosé wines. Owner, and producer, the history of Maison Perrier merges with that of the wines of Savoie and the Alps (France).Sparkling in the Apremont of Savoy through the Chignin, Gamay or the Mondeuse, they represent an authentic lifestyle and wild, internationally recognized. They strive to raise the quality of life as a distinct brand of exception. The wine of Savoie is a unique tradition in the French wine world. Selected among the winemakers of the year by the Wine Spectator.
Vineyard
The wine is produced on the northern side of Lake Bourget in Chautagne and Jongieux, as well as in the Combe de Savoie on granite and clay-limestone soils with a south-east exposure. Production covers 48 hectares, amounting to 3,200 hectoliters of wine, representing 2.5% of the Savoie vineyard.
Winemaking
Hand harvesting. Vatting lasts 5 to 7 days, after which the tank is drained and the free-run wine is separated. Once alcoholic fermentation is complete, malolactic fermentation (the second fermentation) is initiated, transforming the grape’s malic acid into lactic acid. This process reduces the wine’s acidity and prevents fermentation from occurring in the bottle. Malolactic fermentation produces wines that are fuller, longer on the palate, and better suited for aging.
