Nestled on 102 hectares of sunny limestone hills in the heart of the Fins Bois cru, Leyrat Cognac embodies the pure expression of its terroir. Vineyard
The estate is located on a chalky limestone hilltop at 154 meters of altitude, in Claix, at the heart of the Fins Bois cru. The soils combine 50% hard limestone from the Jurassic era and 50% soft limestone from the Cretaceous, bringing finesse and freshness to the eaux-de-vie.
Winemaking
Fermentation takes place on site with both alcoholic and malolactic fermentations in thermoregulated stainless-steel tanks, using selected local yeasts. Double distillation is carried out on the lees in traditional 25-hectoliter Charentais copper stills with onion-shaped lids. Ageing begins in new French oak barrels for 4 to 6 months, followed by several years in 400-liter Limousin oak casks with quality loose grains.
Tasting notes
Fine VS displays a bright yellow straw color. The nose reveals fresh white fruits such as pear and peach, followed by floral aromas delicately underlined with a hint of wood. On the palate, the attack is supple and delicate, evolving harmoniously with a silky texture. This VS is light, graceful, and already very mature. 40% Vol.
Food pairing
Enjoy neat, over ice, or as the base for refined cocktails. Fine VS also pairs beautifully with Bayonne ham, fish carpaccio, roasted white fish, or mild cheeses such as Edam and Brillat-Savarin.
