Nestled on 102 hectares of sunny limestone hills in the heart of the Fins Bois cru, Leyrat Cognac embodies the pure expression of its terroir. Produced exclusively from a single estate, each eau-de-vie is crafted with meticulous care, offering finesse, balance, and aromatic depth. Part of the Abécassis family estates – one of the leading independent producers in Cognac – Leyrat is internationally recognized, with numerous awards including Cognac Producer of the Year (IWSC, London). Vineyard
The estate lies on a chalky limestone hilltop at 154 meters of altitude, in Claix, at the heart of the Fins Bois cru. The soils are composed equally of Jurassic hard limestone and Cretaceous soft limestone, providing depth and structure to the grapes. Vine age of 43 years.
Winemaking
Fermentation takes place on site with both alcoholic and malolactic fermentations in thermoregulated stainless-steel tanks, using selected local yeasts. Double distillation is performed on the lees in traditional 25-hectoliter Charentais copper stills with onion-shaped lids. The eaux-de-vie are first aged in new French oak barrels for 4 to 6 months, then in red and old Limousin oak casks for many years. The final blend includes very old eaux-de-vie, with a minimum ageing of 10 years.
Tasting notes
XO Elite reveals a deep old amber gold color. The nose opens with toasted wood, spice, and cocoa, followed by aromas of pine resin, varnished wood, and candied fruits enhanced with floral accents. On the palate, it is supple and harmonious, with elegant layers of tobacco, spice, and candied fruits that linger in a long, refined finish. 40% Vol.
Food pairing
Best enjoyed neat to appreciate its complexity, XO Elite also pairs wonderfully with crème brûlée or desserts featuring apricot and orange peel.
