Nestled on 102 hectares of sunny limestone hills in the heart of the Fins Bois cru, Leyrat Cognac embodies the pure expression of its terroir. Vineyard
The estate is located on a chalky limestone hilltop at 154 meters of altitude, in Claix, at the heart of the Fins Bois cru. The soils are equally divided between Jurassic hard limestone and Cretaceous soft limestone, contributing depth and elegance to the eaux-de-vie.
Winemaking
Fermentation is carried out on site with alcoholic and malolactic fermentations in thermoregulated stainless-steel tanks, using selected local yeasts. Double distillation takes place on the lees in traditional 25-hectoliter Charentais copper stills with onion-shaped lids. Ageing begins in new French oak barrels for 4 to 6 months, then continues in red and old Limousin oak casks for many years. The blend includes eaux-de-vie aged for a minimum of 10 years.
Tasting notes
XO Hors d’Âge presents an old gold color. The first nose reveals spices and wood, evolving toward warm aromas of acacia honey and candied orange. The second nose brings delicate ginger combined with nutmeg. On the palate, it is supple, harmonious, and silky, offering a full-bodied sensation. The finish is long and elegant, marked by notes of vanilla and brioche. 40% Vol.
Food pairing
This Cognac can be enjoyed neat or over ice, and pairs perfectly with duck breast, scallops, smoked salmon mille-feuille, or chocolate fondant.
