Vineyard
Plot selection from each side of the Rhone river : on the right bank to give aromatic freshness; on the left bank, in the Aygues Valley, for more roundness. The vines grow on pebble terraces, clay-limestone slopes and gravel soils located on the banks of the Aygues river
Winemaking
Direct pressing. Moderate cold settling (6-8°C) for 24 to 48 hours. Slow fermentation at controlled temperature to preserve aromas and ensure beautiful complexity. Malolactic fermentation is not carried out to maintain the freshness. In vats, on lees, for four months.
Tasting notes
This Côtes-du-Rhône has a light, crystalline colour with subtle green reflections and aromas of white peach, pear, exotic fruit and apricot. A white wine of great freshness, combining liveliness and generosity.
Food pairing
“Sole meunière”, Sea bass carpaccio with capers, poultry.
