history
Château La Rabotine, nestled in Sury-en-Vaux, is a historic estate built in 1600 by notary Louis Rabotin, whose name it still bears. Over the centuries, it witnessed remarkable events, including the sheltering of priests during the French Revolution by the Grangier family. After passing through various hands, the château was reclaimed in 2010, bringing it back into the family and restoring its connection to the vineyards. The estate spans 12 hectares across 19 parcels, benefiting from Sancerre’s finest terroirs. The vineyards are planted on Kimmeridgian clay-limestone (“Terres Blanches”) and pure limestone (“Caillottes”), creating elegant, mineral-driven Sancerre Blancs, while the iron-rich clay-limestone soils produce powerful and generous Sancerre Rouge and Rosé. Driven by a deep respect for nature, the estate is HVE Level 3 certified and follows organic farming principles, reducing chemicals and preserving soil health. Every step, from vineyard management to winemaking, is guided by a commitment to sustainability and biodiversity, ensuring that heritage, terroir, and craftsmanship shine in every bottle.
Vineyard
Vines 50 years old on average. Single plot cuvée (2022 is the first vintage available): plot facing south on Kimmeridgian Marls. Simple Guyot pruning, disbudding, mechanical work of the soil under the rows, grassing between the rows
Winemaking
Manual harvest, pressing, cold settling, aging on fine lees for 12 months in amphora from Italy of 1600 liters then 6 months in stainless steel tank
Tasting notes
Color or white with silver highlights. The first nose takes us to fresh mineral notes but also floral (elderflower). Then come more delicious notes of white-fleshed fruits such as pear and mirabelle plum as well as notes of fruits in syrup and tart. The attack on the palate is fresh with minerality, spices and citrus fruits. Then the aromas become richer and more coated with fruits in syrup (mirabelle plum and nectarine)
Food pairing
Ideal to accompany white meats, noble fish or dishes with sauce.
